Zucchini fritters with parmesan

You can serve zucchini fritters as a snack, appetizer or side dish. Zucchini is one of the very low-calorie vegetables, because it has a high water content. If you’re trying to cut down on calories, fat or cholesterol, zucchini is an excellent choice. There are so many ways to make this recipe, but the following is what I have found works best for my family.

 Trim the ends from zucchini and grate them. Place in a colander and squeeze out as much excess moisture as possible, so that zucchini are completely drained.

Transfer zucchini to a large bowl. Add flour, grated parmesan, whisked egg, 1 teaspoon of baking powder, chopped chives and season with salt and pepper to taste. Combine everything together.



ZUCCHINI FRITTERS WITH PARMESAN

Ingredients

3 medium zucchini
1/2 cup of flour
1/4 cup of grated parmesan
1 egg, whisked
chopped chives
1 teaspoon of baking powder
salt
pepper
olive oil

Instructions

  • Transfer zucchini to a large bowl. Add flour, grated parmesan, whisked egg, 1 teaspoon of baking powder, chopped chives and season with salt and pepper to taste. Combine everything together.
  • Heat olive oil in a large skillet over medium high heat.Drop three portions of zucchini mixture into pan, flattening with a spatula, and cook for about 2 minutes, until golden and cooked through.
